This simple Rooibos with a crunch of ginger biscuits makes the perfect ice cream for any occasion.

 

South Africa (23 October 2025) – Running out of ideas for show-stopping treats to serve your guests? Kenneth Tebogo Middleton’s latest kitchen creation has dessert lovers talking. His Rooibos and Ginger Biscuit ice cream takes two classic flavours and turns them into the perfect summer treat.

The recipe combines the comforting taste of Rooibos tea with the crunch of crushed ginger biscuits. All mixed together into a creamy ice cream that tastes like nostalgia in a bowl.

Kenneth starts with a simple base: milk infused with Rooibos teabags, steeped until it’s rich with that deep, earthy flavour. Once cooled, it’s mixed with whipped cream, condensed milk, and just the right touch of ginger and vanilla. Then comes the crunch. Handfuls of crushed ginger biscuits folded in.

From there, it’s pure indulgence. A drizzle of caramel sauce tops it off before the mixture heads to the freezer for an overnight chill. By morning, you’ve got yourself a creamy, golden scoop of ice-cream

It’s versatile. Whether spooned over waffles, sandwiched between biscuits, or eaten straight from the tub (no judgment here), Kenneth’s ice cream captures the essence of local flavour in every bite.
