Karoo Porcupines or “Iron Pigs” might sound unusual, but one bite in and you’ll understand why this savoury snack might be addictive. Salty and crunchy, Karoo Manna shared this snack which combines fresh bread, bacon-flavoured savoury biscuits, Bovril and finely ground biltong into one seriously memorable mouthful.
Despite the playful name, there’s nothing complicated about it. In fact, it’s built entirely from everyday pantry staples.
It’s the contrast that makes this recipe shine. The soft bread balances the crunch of the biscuit, while the salty Bovril and biltong bring a deep, savoury richness that’s unmistakably South African.
What You’ll Need (Makes 1 Dozen)
- 3 slices fresh white or brown bread
- 24 bacon-flavoured savoury biscuits
- 50 ml butter
- 10 ml Bovril
- Biltong Powder
Method
Mix the butter and Bovril until smooth. Cut four small circles from each slice of bread (about the size of the biscuits).
Spread the Bovril butter on one side of each biscuit, then sandwich a bread circle between two biscuits. Coat the exposed bread edges with more of the mixture, then roll in finely ground biltong until the sides are fully covered.
