Content creator Kenneth Tebogo Middleton shows how to turn South Africa’s favourite snack into a rich, garlicky biltong mayo that’s perfect on biltong or even fries.

South Africa (17 March 2026) – We all know the drill by now. Buy some biltong, keep it on the side, and snack away. But have you ever thought about taking that iconic treat and dipping it into a flavour-packed mayonnaise? That’s exactly what content creator Kenneth Tebogo Middleton has done, and the results look delicious.

The recipe starts with a whole bulb of garlic, roasted to perfection, while coriander seeds are toasted until fragrant and coarsely ground. Egg yolks, Dijon mustard, white vinegar, lemon juice, a pinch of sugar and salt, plus some water, get blended with the roasted garlic and vegetable oil into a creamy base. Then comes the star ingredient: biltong powder. A few cracks of black pepper and the crushed coriander finish off this bold, South African creation.

The beauty of this biltong mayo? You don’t have to limit it to pairing with biltong itself. It’s also perfect for dipping fries or giving your favourite dishes a unique twist.

Kenneth, known for his playful and creative recipes, has once again shown how a simple idea can become a culinary hit that’s fun, tasty, and totally South African.
